 Jane, I have so far taken as many zucchinis to work as I can carry, and told everyone to help themselves but they think there is a catch. I like your idea better.Plum, I have adapted the cream of pumpkin soup recipe to read cream of zucchini soup and carrot cake recipe to read zucchini cake recipe.  Yes t was a surprise to me. You can only really use them in ratatouille or soup but yes the freezer is great. In fact you can buy frozen zucchini in the frozen food shops here.  I like adding grated zucchini when I make falafel. I adds moisture and makes the texture less dense.Zucchini dessert!?!
