3:30 a.m. here and I am up all night making a batch of goats milk cheese -- well, it's the cheddar that's taking forever as the chevre with herbes de provence and the feta and the mozzarella are pretty straightforward. Didn't intend to pull an all-nighter, it just happened that way.

Plum I can only eat sheep's milk and goats milk cheeses so please can I come visit?

I'm working on a batch of ricotta now (5th variety) while I'm pressing, timing and rewrapping the cheddar.
The chevre will be done draining just before lunch time(!).
The feta needs to age for 4-5 days.
The mozzarella and ricotta will go into a lasagna midweek, and
the cheddar More...
