My Shepherd's pie is very similar to what Rolanda said except I use left over roast meat,minced of chopped lamb,beef or pork, make a thick gravy put in herbs, diced onions,carrots, celery, corn and capsicum,(frozen mixed veg will do) top with mashed spuds or mixture of spuds and turnip, fork over to make rough and spread a smidgen of butter over it, bake in oven for half an hour.

Congrats. Now you'll have to work on a cp.

Bye Rolanda, Happy Easter is I don't catch you before. Not heard from eaa yet.

Lynda, both of yours sounds close to my mom's. I seem to remember peas, green beans, corn, onion, carrots in hers. I haven't made it in a long time. Since it's just us 2, we'd be eating it for at least 3 meals.

that's right.. eaa's son got married last week, and they go back to Tasi on the 26th !!

the meat sauce does freeze well Becky.. all you would have to do is defrost, and add the potato topping.. and wha la dinner is served !!

I'll give it a try. Always looking for ways to have instant meals on hand.

Becky I make small individual pies and freeze ones I don't need. There are only two of us as well, quite often when I make a meal I make enough to freeze a couple of meals, all I do then is add fresh vegetables.

Hi Suzy, you snuck in there. Sauce for Italian type dishes seems to improve for freezing, especially the tomato based ones.

I'll have to cook it and make an extra big batch - then I only have to cook once for 2 meals!! Sounds like the way to go to me!

I might make it this weekend. Right now the only meals I have frozen are soups.

My meatloaf freezes well, I always make 2 loaves and I just microwave it (with water) for the second night.

I'm leaving already. I start tutoring in a few minutes and won't finish until 7 tonight. A long night as I had to rearrange stuff to take d2 to the doctor yesterday. Sounded good at the time, but really sounds dreadful now!

We just ate the last meatloaf a couple of weeks ago. Tonight we had fish, veggies, fruit and rolls. Tomorrow's dinner is up in the air. I'm ready for some moral food.

Shepherds Pie...hmmm, not a bad idea for the next menu. I will either make up the menu tonight and go shopping tomorrow or hubby and I will do it on Saturday. Can't do it on Friday, of course!

I make a mean salmon patty with tin salmon and mashed tater! I also love Thai style fish cakes.
