Croque en bouche are very popular here for some as wedding cakes... a tower of wickedly filled profiteroles drizzled with toffee ....YUM!!!

The weather has been quite pleasant the last few days. Heating up today (36) and going to be HOT tomorrow (40), cooling down a tad the next few days then HOT again Sunday and Monday !! SIGH !!

Current temperature in my neck of the woods is 33.

Becky, for some of us who must watch our blood sugar levels, the key word in "a little reward never hurts" is little! To have any of that scrumptious sounding slice, I would have to have a meal of a small serving of extra lean protein, broiled, and veggies like Broccoli, a salad, tomatoes or other zero carb veggies. then I would have to get out a calculator and see just how small a serving I would need to contain only 45 to 60 grams of carbs (3 to 4 servings of carbs, the entire meals allowance). Probably would be very very small!

MizT, the pastry for the cake is made with water, butter, flour and eggs. You could use sugar free pudding for the filling. It can be frozen for later desserts.

Heidi, I typed out a long post for you earlier then looked up and realised I hadn't clicked in the box!
I said that at the time I was typing, I was listening to a woman from the Wildlife Rescue Service saying what they are doing for the animal victims of this tragedy. They have set up a triage and treatment centre in one of the ovals in the affected areas, with many, many vets offering their services to treat any wildlife that the public find and bring in.

Becky, that would reduce the carbs, but both the flour in the pastry and the starch in the pudding are carbs. I could have a bit larger serving though.

I also have heard that many people with available pastures are offering them to anyone with livestock who need to agist their cows, horses etc.
Many vets have rung up offering to treat any pets who need any sort of help that they will do it for nothing and look after them in their surgeries until people can make other arrangements.
Lort Smith, an animal shelter, are also offering the same.

Continuing: The cattle yards are taking in all animals for early sales at the stockyards, even though it is early in the selling season, they are offering farmers premium prices for the cattle they can no longer keep.
Offers of hay and feed are having to be rejected because they have been inundated and do not need any more!

OH, one interesting thing I read today, since we are talking about injured animals. Someone talking about getting the survivors of the fires what they really need, instead of what we perceive them to need. He said immediately after the Ash Wednesday fires, what those people on ranches and farms and in the rural areas needed more than clothing and food, were bullets. They did not have enough bullets to put down all the animals who were to severely injured to save. I think that is the saddest thing I have read today.

Tricia...I did eat the smallest slice...I follow the directive with emphasis on "little"...or at least I try to...Yesterday I played and today I pay!!!!
Becky a dob off cream will hold them together...they are good for a large gathering because they usually have 60-70 puffs in a tower and easy to separate into individual serves

hehe Becky ...you can cheat and use a cone as a support to stack them up against.
I have only ever made choux patry once...made savoury puffs with a cube of VERY tasty cheese in the centre...as they cooked the cheese melted making a yummy softened cheese center

My brother is now on high alert...all he cares about is staying alive now. He is still in Euroa where he evacuated to..he will hopefully know in a couple of days if he has a home to go back to. All depends on the wind...
Yarck is very close to him so if you hear anything more on there or Ruffy let me know.
I have also discovered that he drove back from Melbourne on Saturday ... it was apparently a nightmare trip with all the smoke and fires... there is no way to get to his home other than going through the areas that the fires were raging in... No wonder he needed no second prompting to evacuate...
Oh dear it all makes me feel sick!!
