Wasn't sure if the post would go through. It took a while.

Did something really stupid today. The window in front of my desk was stuck open and I needed to close it to put the air conditioner on because it was getting hot and humid. I stood on the desk and got the leverage to close it. But then I stepped on my swivel chair to get down and it spun and my feet flew into the air and I landed on my hip. The good news is that the xray shows that my hip is not broken, the bad news is that my side and butt are badly bruised and it's difficult to walk. Hopefully, I'll be good enough to bring Meghan down to NYC for her flight. Otherwise, hubby will have to drive down with one eye working. The two of us make a great team!!!

Baking in the morning, they like me to help me cook muffins for morning tea, so we'll make enough to share with you, hope you enjoy - Apple & Cinnamon OK

Welcome back, Mary.
Stella, tsk, tsk for the hip. Big Brown is to race at Saratoga soon. I'd like to know someone who saw him in the flesh.

Mock = mobile phone sock

They can also be used for the new zippy little digital cameras.

The kids love them and keep asking d2 to get me to make them for them. I say no, but will do it for the party.

SUZY, here is a recipe I found online and then adapted to how I make it. Saved a lot of typing hehe

1 tablespoon vegetable oil
3 1/2 cups self rising Cornmeal mix, or 2 1/2 cups self rising corn meal + 1 cup self rising flour

1 cup buttermilk
1 cup low-fat milk Or water
2 large eggs
2 to 3 tablespoons vegetable oil, or butter

If you do not have self rising flour and corn meal or corn meal mix (that is plain flour and plain corm meal) , add
2 teaspoons salt
2 teaspoons baking powder
1/2 teaspoon baking soda

Preheat oven to 400°. Add about 1 tablespoon of vegetable oil to a 10-inch seasoned iron skillet; place in oven.
In a mixing bowl, combine the meal, flour, (salt, baking powder and soda if using plain meal and flour or corn meal mix) .
In another bowl, whisk buttermilk and milk (or water) with eggs and melted butter or oil. Gradually fold milk mixture into dry ingredients, folding and mixing just until all dry ingredients are moist.

Using oven mitts or potholders, carefully remove the hot skillet from the oven; swirl slightly so oil coats sides of pan. Pour batter into the skillet then return to oven. Reduce heat to 350°. Bake cornbread for 35 to 45 minutes, until it pulls away from sides of pan and is lightly browned.
Cut into wedges.

SUZY, not sure what is available in OZ in the way of self rising flour and meal, or the corn meal mix I prefer to use. I know in some northern states here, self rising flour and meal is not available, found that out when I made biscuits for oldest daughter from the flour in her cannisters, when she lived in New Jersey. They were just barely softer than Hockey pucks. I went looking for self rising flour and found ONE dusty bag on a bottom shelf of one small grocery. Stock boy working nearby, said, Oh good, that has been here for a while. hehehe

OH STELLA, so sorry about your fall, I know how something like that can hurt!

Steping into a swivel chair is NOT A GOOD IDEA. Now, your Mom has spoken and I shall hush about it Hope you recover soon. Deep tisue bruises like that can really hurt, and they turn lovely colors. Good thing the bruises are covered by clothing, so you do not have strange looks or explinations.

Lee, apple and cinnamon muffins sound lovely thank you. May I take 2? Breakfast for me and hubby today, and I shall not have to cook.

RUBY, thanks for the question about Mock, I ws also wondering what one was, but had not yet asked. SUZY, cute idea for the guests at the party. how do you make a mock? Knit, fabric cut and sewn. inquiring minds want to know.

Mary, Lee, good to see both of you back "talking" with us.

OK, need to get coffee refill and see what I can do with some plums. did I mention, a neighbor gave me about 10 pounds of plums? Only problem is, they are too green for making good jam. The deal was, they furnish all the plums I want if I make them "a couple" jars of jam from it. I have the green plums in a brown paper bag with apples, hoping to encourage them to ripen enough soon. can use up to 25% of them green, but do need the majority of them ripe. I shall also make just stewed plums and freese, hubby loved those over plain cake or make into a plum crisp or plum dumplins. the stewed plums freeze well, so shall put those up for next winter!

Rather fond of plum jam MizT. We like it with pork chops rather than apple sauce.
Hi to all my SA5 friends.
Laura had a bit of a cold when she was here Wednesday and she has passed it on.I have not been here much today.
Also had Laura for a couple of hours today and she wanted to 'make cakes'. We made cup cakes and she iced them all. Does not eat them though as she does not like cake or sugar.(She is not three yet)

Evenin' all!

MizT, thanks for the recipe, bit of a dilemma though. The closest we can get to cornmeal is polenta, but we do have self raising flour. I probably should stick with plain flour and the raising additives as it is unlikely the polenta is self rising. I'll try it and let you know how it turns out! Ta muchly!

Good morning all! Can walk better this morning! Thanks for your thoughts! Another beautiful morning but it is supposed to rain later on because of all of the heat and humidity. Brendan is working at the Jazz Festival today. It will be a long day for him! He goes in at 9am and won't be home until after midnight.

Suzy, you must post a picture of the mock and let us know how you make them! Do they sell a corn muffin mix in your stores? (like a brownie mix) Not as good as home made, but good nonetheless!

June, hope your cold gets better soon!

Ruby, the track is only a few miles from my house, but I usually don't go there for the big races because it is too crowded. I'll have to see what we're doing that weekend. We usually go up on a few Sundays because they have free giveaways with admission - tshirts, coolers, chairs, mugs, etc. The kids like to go and look at the horses. We usually only stay for a few races since it is usually hot in August. )track is only open the last week of July and August.)

June, I once made what my family called "Plum good relish". It was from a low sugar plum jam recipe, made with the tart, red skinned, red fleshed plums that come from trees that have red leaves year round! I do not know the variety name, these were just on the property where we lived at the time. Trees had NEVER made fruit before, but that one year, a bumper crop, I had 3 trees worth of fruit! I think I put up about 50 pints of just that one plum jam! And we loved it with everything, used it with turkey and dressing, chicken and pork dishes as well, It was lovely.

Unfortunately, these plums are the ones I call tequila sunrise, that is the colors you get , the peach, yellow and spring greens in these fruits, Small, so a lot of cutting for a small yield. But hey, the fruit is free!

I just hunted up an old recipe for no pectin jams and jellies, and gonna give it a try! Comercial pectin is $2+ a box, and it makes only 4 pints or less. I have plenty of green fruit, and green fruit is high in pectin, lets use what we got!

Recipe says use 1/4 underripe fruit and 3/4 ripe, so I am gonna try it. If it does not "set" firmly, well, hubby said, we will just use it as syrup for pancakes and french toast.

Morning all!

MizT, I knit the mocks.

Stella, I just do about 6 rows rib, then regular knitting until it's a bit longer than a phone. I sometimes add stripes or shapes in a fluffy wool. I haven't tried to take photos of them, will give it a go before I give them all away!

Stella hope you are feeling a bit better after your fall. Take things as easy as you can, which probably wont be that easy especially with all the things going on in your family.
I don't know if Heathrow takes Euros in their shops, but I'm sure there must be a way for her to buy things as she is in transit and not actually visiting the UK. I do know that there are lots of shops etc there.

Well I've updated her details and it still doesn't seem to be showing. Never mind... I've posted a message to her on easy and will go to her page.

She still isn't awake! Does anyone else have children who have never woken early on birthdays or christmas? I sometimes wake mine because I can't wait to see them open their pressies!

Hi Brenda! You snuck in while I wasn't looking...

I was at Heathrow airport in 1988 - before euros - and was able to exchange just a small amount of my cash into pounds to spend while in the airport. I still have one of them!
