Sorry, Suzy, but my comment popped through first. I am considering the upside-down method. But, then, I'm intrigued by the brining method. I haven't ever tasted turkey done either way, so it would be trial-and-error for me.

Hubby has baking our turkeys upside down ever since he first heard of the upside down method and tried it = 15 years?

My nephew and BIL deep fries theirs. It's not as greasy as you'd think. I think they brine them first. I'll check and let you know.

Just popping in for a catch up here. Glad to read all the turkey comments. The one I am doing right now is a 'Breast Roast Traditional'. This is 100% turkey breast out of a box!(Ingham's).
My steamed veges are on top of the wood stove and the roast is nearly cooked. I will do gravy with this and am about to make apple crumble for dessert. I will welcome all recipes for when I have to cook the frozen turkey though!!

I just read a news story and got annoyed all over again. Every time I think about it I start to bluster! About 3 years ago now (seems like I hold a grudge!!) Ebob was at a school camp and pulled something off her head. She went to a parent who was helping with supervision and said 'I think I had a tick on my head'. The parent ran screaming to the conditioner bottle 'aaaaahhhhh nits!' covered Ebob's head with conditioner, put her hat on and said 'don't you dare take that off' (read, 'don't you give my kid nits/head lice'). It wasn't until she came home - 2 days later - that I discovered the remains of the tick and NO head lice. When I think about what could have happened I almost hyperventilate.

Suzy, don't think I've seen a kid that heavy yet. Some people don't have a clue what the difference is, let alone knowing what they look like. I probably would have called the woman up and read her the riot act.
Viv, roasting a turkey is pretty standard. You have to decide on whether or not to stuff it. If you want to stuff it, there's all kinds of stuffings to choose from.

I wrote a letter to the school saying they had better not check her for nits ever again and if a child told someone they thought they had a tick someone should listen to them. Inspections were banned from that day on...

It's supposed to smother the lice Becky - the current most recommended way to treat head lice here, along with pulling the eggs out one at a time and combing out the lice. The conditioner is supposed to be left on overnight.

There's a bunch of those products here too Becky - and I've tried a lot of them! And the buzzing combs that cost a fortune. And shampoos and head bands that are 'treated' with tea tree oil for prevention... it's big business. I haven't had to deal with it in years, but I found the only thing that worked was sitting down for hours pulling out every last egg one at a time....

I've heard of using vinegar. After you shampoo, soak your hair in vinegar for about 5 minutes, then comb with a fine tooth comb. The vinegar is supposed to kill the lice and nits.

Think I've heard of that, but can't be sure. I'd be afraid of getting too close to a lit cigarette or fire. But, then that'd get rid of them pretty quick.

I can remember when mine were in infants school a child was sent home with head lice. Next day the child was back and the mother sent for. The Mother said "it is ok I sprayed her head with fly spray". Explanations had to be given as to the correct treatment.
For Christmas I just but some pre-cooked turkey breast, plus ham, chicken,etc. Remember it can be very hot here on Christmas day.

Suzy it was back when a lot of Italian and Greek migrants were living in Melbourne and many had little education as it was soon after the war. The poor mother thought fly spray was a logical way of getting rid of them. My kids never got nits but worms was another matter when we lived in that area. Good coversation at dinner time!.
