Welcome to my page!

 

I enjoy cooking but hate cooking for one - most recipes seem to be set up for families. If you have any good recipes for one (or two if leftovers will freeze) please feel free to submit it.

 

I'll be posting weight loss recipes for one frequently on my page and at some stage I'm going to photograph them so that you can see the lovely low-fat food  Innocent

First item on the menu is one of my favourites! Bean Tacos.

Three taco shells
125gr can of red kidney beans (drained)
125gr tomato salsa (I like mine hot)
50gr low fat grated cheese
50gr low fat/no fat natural yoghurt
shredded lettuce leaves.

Heat beans and salsa in saucepan on low heat for 10 minutes. Heat tacos in oven according to instructions. Distribute cheese then bean mix then yoghurt then shredded lettuce between each taco shell and enjoy. Yum. So very very easy.

I usually leave a page warming gift of a packet of caramel TimTams, but seeing as you are dieting... here is a bowl of fresh blueberries, raspberries and strawberries. Yum.

Hi, Karen and Welcome! I was going to leave a couple of boxes of Frango Mints in various flavors - but, Rose says you're dieting. So-o-o, since she is leaving you fresh fruits, I'll just leave some pink and yellow tulips, as we're finally enjoying spring here. By the way, the recipe sounds yummy - and low cal. Thanks!

Karen: I think keeping things the same for now, as much as possible, is the best thing to do. If you've never sent flowers to him on his birthday, don't do it now. Normality is a treasure.

But don't forget the physical side. You didn't say anything about his living circumstances, and running an errand, driving to chemo, a decent meal can mean a lot. That also applies to giving his family, or other caregivers, a break. Just knowing they can call you to make an airport run, for example, is a great comfort.

As for black/grim humor, a little bit is ok in person, but not in a card.

Just an opinion.

Karen I think your friend would want you to treat him the same as you usually do. I have had cancer myself and the last thing you want or need at this time is to be treated like a victim or treated as if you are about to die... even if it is a possibility. Good luck and I hope your friend has a good outcome. He needs to keep positive. As for his 'black' humour, you might find that for a little while that may desert him.

Karen, I agree, keep it normal. If it was not cancer but some other illness you were sending a card to him for, what would you send? the only thing might concern me, is will others see the card, people who do not know his taste in humor, and be offended.

Karen: Not to change the subject, but you asked about meals for one. On 25 April 06, I posted a not-bad (ahem) lasagna recipe on page 5 of the Easy comments. It makes nine decent portions, which freeze very well individually, and provide a lot of quick, easy meals later. I also play a little game of buying things on sale, so that the meal costs less than $US1.50, with salad and garlic bread. Wine is extra.

karen - go with your gut feeling! send him the joke, but at the end tell him how worried sick you are about him, and is there anything you can do. often people tread on eggshells with people with cancer, but the more normally you can treat them the easier it is for them to deal with the abnormal! let him know you are there for him all the time, and keep in touch. what a lovely friend you are to care so much!

Karen, I am new to this posting. a new member. The only reason I signed up is to answer your question about your friend with cancer. My wife passed away last fall and I can tell you she enjoyed any and all types of cards and humor. she looked forward to getting and hearing from everyone.

As one who has undergone chemo, a book of jokes or cartoons (e.g. Farside, Dilbert) would be appreciated to have a laugh as you have your treatment. I found that cooking food put me off but I could eat other peoples' cooking ok. I am 4 years away from my op. (breast cancer) and feel great. I Wish your friend the best of luck. I read a good book 'Shattering the Cancer Myth' by a herbalist/dietician with good food recommendations.

Karen,I'm so terribly sorry for both you and your friend. You have some marvellous friends here at Sudokuland, all with sage advice. It is most heartening to see the response you have had. Try to stay positive, that's the creed I try to live by. If you need anything else from this combined brains trust, you only need to ask.

Karen, What wonderful advice you have received. I've and some of my family have been through cancer treatment and as said previously normality is something you yearn for but as everything becomes more challenging a good laugh can bring some much needed relief. Flowers and sympathy made me sad (I cried enough without any help) but knowing all my friends were there for me was fantastic. I agree with Patmac 'Farside' or similiar would be appreciated. Make sure you have support to, all the best.

Karen, on your exam. Hope you do great (or did great). With all the studying yu must have done, you should be well prepared and do a super job on it. Celebrate after you get done, and then again when you get the great news that you passed with flying colors.
