Thanks for your message André. I do hope you are well and will be able to enjoy the Festive Season to the full. I am not over my ticker trouble but nothing happens now until the New Year. I don't know if you have picked up the fact that my younger son has won a prestigious Newton International Fellowship to Cambridge University next year so I will have a representative of the family in 'The Old Dart' for a couple of years.

Our son's Fellowship is for two years and he will be researching biofuels. His expertise is in flame technology - he is currently doing research at the University of Technology in Darmstadt, Germany. Of course, we are as proud as punch.

Chateau do villandry. Well I remember looking out from the chateau onto those gardens and the wonderful crunch of white gravel underfoot as we wandered ... but that was back in 1996 when I was on a cycling tour through the Loire valley. You know the style, gaily pedalling off in the morning with your bike panier holding a bagette, a few treats from the boulangerie and an empty bottle to fill at some la cav on the way ... while your luggage is transported to the next 'otel.

Here’s the traditional

LEMON CORDIAL
Ingredients:
Juice of 7 large lemons
Grated rind of 5 large lemons
1 kg sugar
1.25 litres of water
25g citric acid
Method:
1.In a large pan, boil up sugar, water, grated peel and citric acid.
2.Take off and add juice, If preferred, this may be strained.
3.Bottle whilst still hot into clean, sterilised (in oven) bottles

Mix it with gin and soda if you want an alcoholic drink, or vodka, or what ever

Basic Chocolate Truffles

•Quick and Easy
•yield: 35 truffles
•ready in: 15 mins (5 mins Prep - 10 mins Cook)
This is a basic truffle filling to which you can add your own flavourings. You may use this to fill the chocolate shells you make using moulds or roll into balls then into powdered sugar, cocoa, sprinkles or other toppings.
ingredients
•375g dark chocolate, chopped
•1/3 cup heavy cream
•1 teaspoon vanilla extract
preparation method
1. In a medium saucepan over medium heat, combine chocolate and cream. Heat, stirring, until chocolate is melted and mixture is smooth. Remove from heat and whisk in vanilla. Pour into a small dish and refrigerate until set, but not hard, 1 1/2 to 2 hours. Use to fill candies or form balls and roll in toppings.

Hello André - a very belated Happy New Year to you and your loved ones.
Thank you for your good wishes and sorry I've been so long in extending my best wishes to you.
I had a busy Festive Season and had all seven of my grandchildren together for the first time, so it was extra special.
I felt worn out by the time they had all left as we went out somewhere every day, but at least I didn't have to cook meals as we either had barbecues at Amanda's place, picnics, takeaways or slapped together snacks.
It's back to reality now and trying to lose the extra couple of pounds I added to my waistline (actually, I don't even have a waistline) over the Festive Season.
